Penne with walnuts and gorgonzola (V)


Many people can't face creamy food on a hot day, but I find the pepperiness of the rocket perks this up enough to be acceptable.


Serves 2 as a light dinner


200g penne
100g gorgonzola, or other creamy blue cheese
a handful of shelled walnuts
a bunch of rocket
3 tbsp crème fraîche


Put a large pot of salted water on to boil. Whilst it's heating up, chop the rocket roughly and break up the walnuts into smaller pieces. Crumble the cheese into little chunks.

Cook the pasta accordingly to packet instructions, until al dente. Drain the pasta, put it back into the cooking pot and tip in the gorgonzola, walnuts and rocket. Add the crème fraîche and toss it all together until the crème fraîche has melted sufficiently to coat the pasta. Serve immediately.

  • I replace rocket with a chopped pear into small cubes and serve with a generous sprinkling of parmesan. Delicious :p

  • This was really good. I did it with Saint Agur as that was in the fridge. The walnuts gave it a good crunchy bite to off set the creaminess.
